Olive groves in the Tavoliere di Puglia

The Tavoliere delle Puglie is a flat or slightly undulating territory located in the north of Puglia, so much so that it occupies almost half of the Capitanata; born as a lifting plain (in fact it was once submarine), it extends for about 4000 km² between the Dauni mountains to the west, the Gargano promontory (Candelaro) and the Adriatic sea to the east, and the Fortore rivers to the north and Ofanto to the south.
It is the largest plain in Italy after the Po Valley; it is geologically classifiable as a prehistoric seabed.

The soils have a good drainage capacity while the climate is continental with hot but not muggy summers and rather cold winters with sporadic snowfall. The typical olive of the Tavoliere delle Puglie stands out for its round and elongated shape, the flesh is fleshy and leaf green in color.
