Sea in Puglia
The art of olive cultivation in the Alto Tavoliere delle Puglie is a millenary vocation that makes the territory one of the first in the world for the production of quality extra virgin olive oil. The breezes of the nearby Adriatic sea mitigate the soft hills and have created over the centuries the microclimate suitable for the Provencal cultivar, planted in these places in the 18th century. by Prince Raimondo Di Sangro, descendant of the French Burgundies.
Our Olives are of the Provenzale and Rotondella varieties.
The Extra Virgin Olive Oil is obtained from the first pressing of olives through mechanical processes, therefore without recourse to processes or chemical substances, in conditions that do not cause alterations of the oil and the whose free acidity, expressed in oleic acid, is not higher than 0.8%.
